Banana Bread Muffins

These yummy muffins are perfect for breakfast, well without the buttercream, usually when I make these as a quick on the go breakfast muffin, I would mix in some pecan nuts instead of the chocolate chips.
These are definitely one to try, you would love them, why not get the kids involved. They enjoy eating what they've made and this recipe is a great introduction to baking.
Recipe
230g plain flour
130g caster sugar
2 tsp baking powder
1/4 bicarbonate of soda
1/2 tsp salt
2 eggs
75 ml vegetable oil
1 1/2 tsp vanilla extract
85g mix-ins such as chocolate chips or nuts.
Method
Pre heat the oven to 180 °C, line your muffin tray with 8 cases or if making a loaf grease and line a 9" x 5" loaf tin.
In a medium sized bowl sift together the flour, salt, baking powder and bicarb.
In a separate medium size bowl mash the bananas, add the sugar, oil, eggs and vanilla and mix well.
Add the mix-ins to the flour mixture if using. In two stages pour the flour mixture into the wet ingredients and stir to combine.
If making muffins evenly fill 8 muffin cases, or if making a loaf pour the entire mixture into your loaf tin.
Bake in the oven for 45 minutes or until an inserted sewer comes out clean.
