Chocolate Fudge Brownies
These decadent and indulgent fudge brownies are one of my four year old son's favourite desserts. For most mums I am sure that you have experienced the moment that your little one loved something you made from scratch. Yeah! So you keep making the same dessert over and over.
I have altered the recipe over the years and have added different mix-ins depending on the occasion that we are making them for, if we were having friends over and wanted to serve them as a dessert I would add dark chocolate chips to make them even more special, or as a snack would add pecans nuts to give a lovely crunch.
These are definitely one to keep in your back pocket, as they are easy to make and a crowd pleaser, or maybe it may just be your little one's favourite too.
Recipe
150g chocolate at least 52% cocoa solids
170g butter cut into chunks
300g caster sugar
110g plain flour
30g good cocoa powder, such as bounville
3 large eggs
11/2 tsp vanilla extract
1/4 tsp salt
85g mix-ins such as chocolate chips, chopped nuts or even Smarties
Method
Pre heat the oven to 180°C. Grease and line an 8" x 8" baking tin.
Melt butter and chocolate in a sauce pan, scrape chocate mixture into a medium bowl, leave to cool for 5 minutes.
Stir the sugar, vanilla and salt into the cooled chocolate mixture.
Add the eggs one at a time, beating after each addition just until mix
Sift the flour and cocoa powder together, sprinkle over the chocolate mixture and stir until blended.
If using add your mix-ins and stir until just combined.
Scrap to batter into the prepared tin, and bake in the oven for 35 to 40 minutes .
Tip
I usually check these around 30 minutes after they have been in, for a gooey centre remove the brownies from the oven when the centre is firm to the touch but still has a bit of movement an inserted tooth pick once removed should have a bit of cake crumb but not raw cake batter.
