Nutella Filled Pancakes



Nutty chocolate spread in a rich fluffy pancake batter, top off with pecan nuts and maple syrup or a delicious warm chocolate sauce, what can be better!

I am sure I have mentioned before that pancakes are a big hit in our house, so this weekend is no different when it comes to my son's breakfast order, "pancakes with butter and maple syrup". We know the score, if he could eat pancakes for breakfast, lunch and dinner I am sure he would, as I have and my husband as a matter of fact, don't judge us we just love pancakes.

I try to add different flavour combinations to keep it interesting, I use Nutella in a lot of my baking so thought why not add it to pancakes!


150g self - raising flour
1/2 tsp baking powder
2 tbsp. caster sugar
2 eggs
1 tbsp. rapeseed or sunflower oil
180ml whole milk
dash of vanilla extract
1/2 tsp of the oil that you are using in the batter to oil the pan

Before getting started on the batter, spread six Nutella discs on some baking parchment and freeze for 1 hour, try not to make the discs too thick as they may cause the pancakes to burst. Also because the Nutella is frozen it will cool the centre of the pancake which means that the  centre will take a bit longer to cook through, so overfilling can lead to undercooked pancakes.

Once the Nutella discs are frozen you can start on the batter.

Sift the flour and baking powder into a bowl and add the sugar. Make a well in the centre and add the eggs and oil. Stir them into the flour then gradually add the milk and use a whisk to beat the liquid in. You can also put the lot in a blender and blitz it. Stir in the vanilla.

Brush the pan lightly with oil.  Once to pan is hot enough to start frying wipe the oil from the pan with some kitchen paper, you do not want the pancake to fry in oil.

Get two Nutella discs out of the refrigerator, the frozen Nutella circles will soften quickly so I do this in sets of two.

Ladle 2 tbsp. x 2 of batter into the pan, quickly put the Nutella circles on top of the batter, spoon over enough batter to cover the Nutella circles, this step is important, if the Nutella disc is not covered the Nutella will leak into the pan and burn.

Very carefully turn the pancakes over.  Cook on the other side for another 1-2 mins. Keep warm while you use up the rest of the batter.

Stack and serve with your favourite toppings.
