Raspberry and Ricotta Cheese Stuffed French Toast


The weekend is the time for indulgence and fabulousness "yes! I know that's not actually a word" but sets the scene. We have a bit more time on our hands and if you are like me, making my family yummy food is one if the ways I show my love.

We enjoy breakfast time in our home, and are known to have breakfast for dinner. These raspberry and ricotta cheese stuffed French toasts offer at great excuse because the are just fantastic.

This weekend I used ricotta cheese because I had some leftover from another recipe, you can use other soft cheeses which pairs well with sweet flavours, such as mascarpone or cream cheese.

So impress your family and friends this weekend with your culinary skills, make them this twist on the classic French toast. Wait , here comes the oo's and ahh's. Enjoy!
Recipe

4 thick slices of brioche ( preferably day old because slightly dried out brioche will soak up the egg better)
2 eggs lightly beaten
250ml milk
125g ricotta cheese (you can substitute this with mascarpone or cream cheese)
1 punnet raspberries
40g butter
serve with maple syrup and/or powdered sugar  and more fresh raspberries

Method

Break the eggs into a wide, shallow dish and add the milk and vanilla. Whisk well.

Spread each slice of bread generously with ricotta cheese. Cover one side with fresh raspberries. Close the sandwich with the other slice of brioche covered with ricotta cheese.

Heat 1/2 of the butter in a large pan over medium low heat until the butter begins to foam.

Dip the entire sandwich into the egg mixture quickly, let the excess run off.

Fry the sandwich in the butter slowly on one side until golden brown and set, about four minutes. Turn and cook the other side. If your brioche is really thick, you may want to turn the sandwich on each of its four sides to cook any egg. Repeat the process.

To serve cut the sandwiches into halves. Drizzle with maple syrup, dust with powdered sugar, and add fresh raspberries.
