Chocolate Muffins
These moist chocolaty beauties are super quick and easy to make. Perfect for the busy Moms out there who want to impress and treat their families to something yummy.
You can have these knocked up and thrown in the oven in under 10 minutes. Top the little beauties off with lashings of vanilla butter cream and the rest is up to you. Get the kids involved, they would love to show their creative side, with colourful sprinkles, chocolate chips or even sugar flowers, anything goes.
Recipe
Makes 24 cupcakes
350g plain flour
370g caster sugar
60g cocoa powder
1tsp bicarbonate of soda
1/2 salt
150g chocolate chips
250ml hot water
1tbsp instant coffee
250ml buttermilk
225ml vegetable oil
3 eggs
Method
Preheat the oven to 160°C
Line your cup cake tin with 24 cupcake cases
In a jug mix the coffee into the hot water and set aside until cooled.
In a large bowl sift together the flour, bicarbonate of soda, cocoa powder, sugar and salt, add the chocolate chips.
Using a whisk, mix the dry ingredients together until well combined.
In a separate bowl whisk together the cooled coffee, buttermilk, oil and eggs.
Pour the wet ingredients into the dry and using the whisk mix the batter until just combined, try not to over mix.
Now pour the mixture into a jug with a spout, to make filling the cupcake cases easier. Fill each one halfway.
Bake for 20 to 25 minutes.
