Scotch Pancakes


These are a delicious traditional pancake recipe, enjoy them for breakfast with butter and maple syrup or as a treat with lashing of cream and hot chocolate sauce yum!  The choice is endless, let your inner chef out and enjoy!

Ingredients:
1 1/2 cups self-raising flour
1 tsp baking powder
2 tbsp caster sugar
2 egg, lightly beaten
1 cup (250 ml) milk
60g butter, melted
Pinch of salt




To serve:
100g butter
Maple syrup

Method:
Sift the flour, baking powder and a pinch of salt into a bowl and make a well in the centre.
Mix the eggs, milk and melted butter in a jug and pour into the well all at once.
Whisk to form a smooth batter.
Cover the bowl with plastic wrap and set aside to rest  for 20 minutes.
Heat the pan and brush with butter fry pancake until golden on both sides.
The batter should yield around 6 medium size fluffy pancakes.
